We would like to welcome you to The Ray Cafe!

Our baristas must undergo a full training regiment which includes coffee education, customer service skills, a sanitation program, drink preparation, sandwich artistry and salesmanship. All training is completed under the trained supervision of the experienced manager. Only after each barista has accomplished perfection in each of the skill levels is he/she allowed to perform their new skills for our valued guests.


Bob Pierce
Café and Coffeehouse Manager

Bob began his coffee career in 1998 when he opened his first coffee shop in at Northfied Square Mall in Bradley, IL. Prior to opening the shop, Bob spent over a year studying the coffee industry, tasting products from different vendors and roasters and developing relationships with coffee industry insiders. He received hands-on training from a coffee industry leader in Southern Illinois. Bob developed a strong following of coffee lovers with his flavored coffees which will also be featured at The Ray Café & Coffeehouse.

In 2003, Bob opened and operated the coffee shop at a local hospital in Kankakee, IL. Bob became a fixture in the lobby as he would greet all passing by with a friendly "Hello". Bob amazed hospital administration as he developed a guest base beyond the hospital, it was not uncommon to fill the circle drive outside the lobby with cars stopping by for their favorites from the coffee shop! It was here that Bob was given the title of "Coffee Guru". It was also here that "Bob's Pie Shop Smoothies" were born, a creation that is compared to "eating a piece of cream pie with a straw".

In 2005, Bob choose not to renew his contract with the hospital and accepted a management position with a large independent coffee shop in the Joliet area. Here Bob honed his management skills with a staff of over 15 baristas. This shop also had a large meeting room in which large catered affairs were held along with live music. Bob along with his staff were responsible for setting up the room and preparing the food for these events. As the cafe grew, "wine by the glass" was added to compliment the food menu. Bob became knowledgable of wine varieties and developed a passion for selling wine. Bob became known for greeting each guest entering the shop by name and with a booming "GOOD MORNING".

Bob loves being around people! He often refers to the similarities between a barista and a bartender! Bob and his staff have a passion for their work and for their guests!
